Ready for an incredibly easy recipe that will surely gain a permanent spot on your meal prep menu?  Here are Whole30 Baked Zucchini Fritters, made with only 5 ingredients, all being very simple and easy to find.  With zucchini, apple, eggs, cinnamon and almond flour these fritters are delicious. They have sweetness from the apple and a little warmth from the cinnamon.  The eggs help hold them together as they bake up and add a nice protein boost for your breakfast.

When we make a batch of Whole30 Baked Zucchini Fritters at our house, they don’t last too long.  Most of the time the boys are trying to snatch them right off the still hot baking sheet! We’ll quickly transfer them to a little plate and they carry it over to the island, hop onto the barstool and enjoy a warm breakfast.  It’s quite easy to make these ahead of time and have them in the fridge for a quick grab-n-go breakfast. If the kids have to be off to school early, there’s not always time to make a breakfast from scratch that morning, so having the fritters in the fridge ready to grab is the best thing you can do to ensure a healthy, protein-packed breakfast for the kids on school days.

Whole30 Baked Zucchini Fritters

They are so simple to make, even for those that don’t feel comfortable in the kitchen yet!  First you’ll need a food processor (or just a hand grater) to chop the zucchini and apple. Then a mixing bowl for mixing all 4 ingredients together.  Next you’ll line a baking sheet with parchment paper (easy removal here we come!) then scoop the mixture out of the bowl and place little rounds on the paper.  I usually just shape the fritters with a spoon so they’re pretty close to circular shape. But my friend Lindsey from Nourish Move Love had a brilliant idea that I have to share with you!  She placed a mason jar lid on the parchment covered baking sheet, filled the hole with the mixture and then removed the mason jar lid. PERFECT circles for the fritters! Complete genius!

Ingredients
  • 1 medium zucchini
  • 1 medium apple (pink lade and gala are my favorite)
  • 2 tsp ground cinnamon
  • 1 egg
  • 1/4 cup almond flour
Instructions
  1. Preheat the oven to 350 degrees. 

  2. Using a food processor with the grating attachment, grate zucchini. Remove grated zucchini and place in a doubled paper towel (or use a clean cloth), squeeze excess water out. Place in a medium bowl.

  3. Peel apple and cut into four large pieces, removing the core. Using the food processor again, grate the apple. Add grated apple to the zucchini in the bowl. 

  4. Add the cinnamon, egg, and almond flour. Stir mixture thoroughly.

  5. Line a baking sheet with parchment paper. Make 6 round even fritters. Bake for 20-25 minutes or until golden brown on the edges and cooked through. Remove from the oven. Let cool before moving them. 

Recipe Notes

Store leftovers in the fridge in an airtight container.  Place parchment paper between stacks of fritters.
