Have you thought about making your own almond or cashew milk?  Believe me when I say it’s so simple!! I had thought about making my own for quite awhile, but shied away from actually doing it because I thought it was going to be several steps and difficult.  I was so wrong! So, why would you want to make your own nut milk when you’re able to buy dairy-free milk at just about every store nowadays?  Because you get to control exactly what goes into that milk! Yep, food control freak over here! But I’m proud of the fact that I only want the best ingredients for my family and myself.  There have been times when we’ve brought a half gallon of dairy-free milk home and then read the ingredients only to find sugar added, thickeners added and blah-blah-blah…crap I don’t like in my milk!  So making our own is a great option!

Step one is soaking the raw nuts.  Using the Ellie’s Best Nut Milk Bag, add your nuts or seeds of choice and soak in a bowl of water.  Head over to Ellie’s Best website for a cheat sheet on how long to soak each kind of nut if you want to use something different than almonds. I used almonds for this recipe, and soaked them overnight.  

Step two is draining them and placing them in a high-speed blender ( I use THIS ONE ) along with 4 cups of water, 2-4 dates, and a pinch of sea salt.  Blend them for 2 minutes on high. Once they’re done blending, pour the contents of the blender into the Nut Milk Bag to strain out the nut pulp. Making sure to place the Nut Milk Bag in a large bowl to catch the milk.  

Step three is removing all liquid from the nut pulp.  You can squeeze the nut pulp in the Nut Milk Bag, but a process of kneading the pulp works much better.  Knead the nut pulp around and back and forth to gently (and quite quickly) remove all the liquid from the bag.  

And there you have it, you’ve just made your very own nut milk!  Keep the milk in the fridge for up to three days. Remember not to throw out the nut pulp that was strained from the nut milk.  It works great to add to smoothies, oatmeal bowls and making homemade muffins or energy bites.

Ingredients
  • 1 cup raw almonds
  • 4 cups water
  • 2-4 dates, pitted
  • 1/4 tsp sea salt
  • 1 Ellie’s Best Nut Milk Bag
Instructions
  1. Add the raw almonds to the Ellie’s Best Nut Milk Bag and cinch closed.  Place in a medium mixing bowl and add enough water to cover the almonds.  Let soak for 12 hours.  

  2. Drain the water from the almonds.  Place the almonds in a high speed blender with the water, dates and sea salt.  Blend on high for 2 minutes.

  3. Place the Ellie’s Best Nut Milk Bag in a mixing bowl.  Slowly pour the almond milk into the Nut Milk Bag.  Twist the top closed and slowly squeeze the milk from the almond pulp.  Using a kneading method, extract all liquid from the almond pulp.  

  4. Store the almond milk in a glass container in the fridge for up to 3 days.
