Homemade Chocolate Chip ‘Clif’ Bars

An easy healthy snack that’s quick to make and easy on the budget.

These Homemade Chocolate Chip ‘Clif’ Bars came about when our son, Henry fell madly in love with Clif Bars.  He would ask for them whenever he could, especially when he came grocery shopping with me.  I like Clif Bars too, I feel they are a relatively healthy bar and I’m okay with feeding them to the kids.  But two things: at the time a couple of us were eliminating oats for a gut-healing protocol & they’re a little spendy when you’re feeding four hungry boys one each for a snack!  So getting creative in the kitchen, I used Rice Krispies (or any puffed rice cereal you prefer), sunbutter, honey and few “extras” to make our own version of ‘Clif’ Bars.  The kids love them and ask for them quite often.

Two tricks in making the bars…press them into the pan VERY firmly and put them into the freezer for harden a but before cutting.  They are great as a part of a packed lunch, I have found putting them into a snack-sized baggie helps them hold their shape if it begins to get a little warm.  In hot weather the sun-butter and chocolate chips will begin to melt a tad, so keep them cool.  But in the winter months (which are just around the corner!!) you won’t have any problem at all!

Whether you’re looking for a snack for yourself, the kids, to bring to a gathering…give these Homemade Chocolate Chip ‘Clif’ Bars a try!  I think you’ll like them.  And as an added flavor burst, try the Peppermint essential oil!  Chocolate and mint together are nothing short of amazing!  We use essential oils for a lot of our flavoring because they’re pure and organic and one drop of oil gives a BIG burst of flavor!  I’ve ben asked this question often, “are essential oils safe to use in baking/cooking” aka eat them!  And the answer is yes!  I use them in our Easy Breakfast Sausage , I’ve added a drop of Peppermint to my Double Chocolate Blender Brownies  and a few drops of Tangerine or Orange in my Apricot ‘Clif’ Bars (coming soon!).  So try the essential oils in your baking and cooking, I think you’ll be pleasantly surprised!

Ingredients
  • 1 cup sunflower seed butter
  • 1/2 cup honey
  • 2 1/2 cups crisp rice cereal
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup raw sunflower seeds
  • 1/4 cup dairy-free mini chocolate chips
  • 4 drops peppermint Vitality essential oil (optional)
Instructions
  1. In a medium saucepan over low heat, combine the sunflower seed butter and honey and stir constantly until melted together.

  2. Remove from heat and add the crisp rice cereal and stir until well combined.

  3. Fold the coconut and sunflower seeds into the cereal mixture.

  4. Spread onto a parchment paper-lined baking sheet and place in the freezer for 5-8 minutes or let the mixture cool on the baking sheet on the counter for about 10-15 minutes or until it’s cool enough that the chocolate chips will not melt.

  5. Add the peppermint essential oil, if using, and chocolate chips the gently fold everything together.

  6. Using your hands, firmly press into a rectangle roughly 9×12 inches.

Recipe Notes

Bars will keep up to one week in a covered container in the fridge (or freeze for longer storage).
