PALEO VERSION:
INSTRUCTIONS:
Cut the apples to bite-size chunks. In a skillet over medium-high heat, melt the coconut oil. Add the chopped apples. Give it a stir with a wooden spatula to coat the apples evenly with coconut oil. Sprinkle the cinnamon and coconut sugar on top of the apples. Stir again. Reduce heat to medium-low. Let the apples cook for 10-12 minutes, stirring often to make sure they don’t burn. Once the apples are beginning to soften, remove from heat and serve.
AIP & WHOLE30 VERSION:
To make Warm Cinnamon Apple Skillet AIP & Whole30-friendly, simply omit the coconut sugar. In my opinion, these apples taste better without the sugar, but my taste testers preferred the sugar version. So to make this apple skillet AIP & Whole30-friendly simply follow these instructions:

WHAT APPLE VARIETY DO I USE?
Here’s where personal preference comes into play! I use Gala apples or Pink Lady apples as those are my family’s favorites. But if YOU have a favorite variety, go ahead and use them! You can’t mess this recipe up (unless you forget to stir the apples and burn them of course!) with what variety of apple you use! We make this recipe mostly in the wintertime and apples are out of season here in the Midwest, so I buy the ‘budget-friendly’ ones at Aldi’s. Feel free to use the cheapest ones you find or simply what you have on hand!
