Gingerbread Granola

Gingerbread Granola is quickly becoming our favorite holiday granola.  When I made the first batch trying out the mix of ginger, cinnamon, and allspice, the entire batch of granola was gone in a flash!  The kids and I enjoyed the warm flavors, the sweet cranberries, and the extra nutty tastes from the pepitas and pecans. I made a few more batches and it is still devoured as soon as it comes out of the oven!

Granola is one of those classic holiday gifts.  I have made several batches to be handing out for Christmas gifts.  Everyone that has tried it (and there have been over 20 so far!) has loved the granola recipe!  Granola is easy to make, stores well for a long time and is one of those great consumable gifts.  Gift giving is great, but I have a tough time giving a materialist item that is just going to sit around and collect dust.  Giving the gift of food or something that is consumed, is my favorite gift to give. It will be going to good use, won’t clutter someone’s house and best of all is a healthy option!

Gingerbread Granola

This recipe is long overdue.  I first debuted Gingerbread Granola at the holiday market I went to in November.  I made several batches of this recipe, packaged it oh, so cute (these are the bags I used) gave out so many samples, and sold all of the bags of granola I brought.  The recipe was so new I didn’t have it published yet! Well, fast forward a couple of weeks of kids with fevers, snowstorms so I couldn’t go grocery shopping and just plain ole being busy with homeschooling the kids…I didn’t get the recipe published like I had planned.  BUT…that’s in the past…moving forward! Here is it!!

I hope you all enjoy making this recipe!  That’s my biggest goal with creating this blog and sharing so many recipes…I want you all to thoroughly enjoy being in the kitchen making these healthy recipes and sharing them with your friends and family!  Okay, enough of being sappy…onto the Gingerbread Granola recipe that you’ve been waiting for (and scrolling forever to find!). Ingredients
  • 1/2 cup maple syrup
  • 1/4 cup avocado oil (or melted coconut oil)
  • 3 cups gluten-free quick oats
  • 1/4 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp allspice
  • 1/3 cup pecans, roughly chopped
  • 1/4 cup dried cranberries
  • 1/3 cup pepitas
  • 1/2 cup unsweetened coconut flakes
Instructions
  1. Preheat oven to 350 degrees.  Line a baking sheet with parchment paper, set aside.

  2. In a large mixing bowl whisk together the maple syrup and avocado oil.

  3. Add the ginger, cinnamon, allspice, quick oats, pecans, cranberries, pepitas, and coconut flakes.  Using a large spoon, stir together. Stir until evenly coated with maple syrup and avocado mix.

  4. Pour onto the baking sheet.  Using the back of the spoon, spread out evenly.  Bake for 10 minutes. Stir. Bake for another 10 minutes.  Remove from the oven. Stir. Let cool.

Recipe Notes

Store in an airtight container for up to 3 weeks.
