Lemon Poppyseed Baked Granola Bites are going to be your new best friend.  They are the perfect little cookie bite that has zero guilt tied to eating them!  They’re a healthy little cookie that can be eaten at any time of the day. With great ingredients like cashews, gluten-free oats, coconut shreds, hemp hearts, honey, chia seeds, and poppyseeds…they can be eaten as a breakfast cookie, mid-afternoon snack, or evening dessert.

Baking is one of my favorite things to do!  With baking, I can bring the kids into the kitchen and have them help me.  With cooking, I can to an extent, but having them help stir over a hot stove isn’t always ideal.  So when it’s baking time, the boys get to sit on the counter and help add all the ingredients and stir and (their favorite part) lick the mixing spoons!  With Lemon Poppyseed Baked Granola Bites the boys get to help with every step of making them.

Using a food processor we add all the ingredients into the work bowl, put the lid on securely and start processing it all together.  After about 30 seconds, turn the food processor off, scrape the sides down, replace the lid, and process for another 30 seconds or until all the contents are nicely mixed together and big dough ball starts to form.  Turn the food processor off, take off the lid, remove the blade and begin scooping out the dough one spoonful at a time. Place each spoonful on a parchment paper-lined baking sheet. Then bake it in the preheated oven for only 10 minutes.  They’ll come out lightly golden brown and simply perfect!

Ingredients
  • 2 1/2 cups gluten-free quick oats
  • 1/2 cup honey
  • 2 tsp vanilla
  • 1/2 cup unsweetened coconut shreds
  • 1/2 cup raw cashews
  • 1 lemon, juice and zest
  • 1 Tbsp poppy seeds
  • 1/2 Tbsp chia seeds
  • 1 Tbsp hemp hearts
Instructions
  1. Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

Remove lid, scrape down sides with a small spatula, replace lid and process for another 30-40 seconds or until a large dough ball begins to form.
