Preheat oven to 350 degrees. Line a baking sheet with parchment paper, set aside.
In a large mixing bowl whisk together the maple syrup and avocado oil.
Add the ginger, cinnamon, allspice, quick oats, pecans, cranberries, pepitas, and coconut flakes. Using a large spoon, stir together. Stir until evenly coated with maple syrup and avocado mix.
Pour onto the baking sheet. Using the back of the spoon, spread out evenly. Bake for 10 minutes. Stir. Bake for another 10 minutes. Remove from the oven. Stir. Let cool.
Store in an airtight container for up to 3 weeks.
