Chocolate Chip and Sea Salt Energy Bites
The perfect healthy snack made with gluten-free oats, honey, and a sprinkle of sea salt, Chocolate Chip and Sea Salt Energy Bites has the perfect combination of sweet and salty. Freezer-friendly, these energy bites are great for a post-workout snack or to pack in the kids’ school lunches.
A perfect no-bake snack for all occasions
Kids’ snacks, post-workout fuel, breakfast grab-n-go; these Chocolate Chip and Sea Salt Energy Bites are made for all of the above. The kids love them for anytime snacks, I love them for a post-workout snack, and we all love them as part of our breakfast. With ingredients like gluten-free oats, peanut butter, honey, flax meal, and coconut oil, they host some really healthy ingredients. The added chocolate chips add the perfect amount of sweetness. The added pink Himalayan sea salt adds electrolytes (hello post-workout refuel!) and an amazing salty taste to go with the sweet chocolate. Sweet and salty is an epic combination.
Pop these energy bites into the freezer
These energy bites are amazing just a little frozen. We make a double batch of these energy bites then put them in the freezer. When the kids need a snack we grab a bag of them from the freezer and the kids gobble them right up. They don’t freeze solid so the kids can eat them straight from the freezer.
Let’s make them together
In a large mixing bowl, add the peanut butter, honey, and melted coconut oil. Stir together until creamy. Add the gluten-free quick oats and flax meal. Stir until well combined. Add the chocolate chips and ½ a teaspoon of the pink Himalayan sea salt. Fold into the mix. Using a cookie dough scoop or simply a spoon, scoop out a small amount (about two tablespoons at a time) and squeeze together firmly then roll into a ball using the palms of your hands. Place on a serving dish. Continue the rolling process until all mixture is gone. Take the remaining ½ teaspoon of pink Himalayan sea salt and sprinkle over the top of the rolled out energy bites. Serve or store in an airtight container in the pantry or in the freezer.
- 1 1/2 cups natural peanut butter
- 1/3 cup honey
- 1/4 cup coconut oil, melted
- 1/4 cup flax meal
- 3 1/2 cups gluten-free quick cook oats
- 3/4 cup dairy-free chocolate chips
- 1 tsp pink Himalayan sea salt, divided

In a large mixing bowl combine the peanut butter, honey, and melted coconut oil. Stir until creamy.

Add the gluten-free quick cook oats and flax meal. Stir until well combined.

Add the dairy-free chocolate chips and 1/2 a teaspoon of pink Himalayan sea salt. Fold into the mixture.

Using a cookie dough scoop or your mixing spoon, scoop out some mixture (about 2 tablespoons in size). Press the mixture firmly together then shape into a round ball and roll between the palms of your hands. Place it on a serving dish/plate/parchment paper.

Continue this process until all mixture is used up. Using the remaining 1/2 a teaspoon of pink Himalayan sea salt, sprinkle it evenly over all the energy bites.

Serve the energy bites or place in an airtight container and store in the pantry (for up to one week) or place in the freezer (for up to 3 months).
