There are so many different ways to make energy bites, the options are endless.  We have made several different kinds here in our kitchen. Most energy bites are made with rolled oats, but if you can’t digest them easily or want to mix it up, try using crispy rice cereal.  They’re delicious, easy to make and become the ultimate allergy-friendly snack!

The ideas for what to add to energy bites are pretty much endless.  But the one kind the kids ask for on repeat is so simple. Just coconut shreds, mini chocolate chips and dried cranberries.  Simple is always good in my book! I love having this recipe for the kids. It fills the kids up for a long period of time, it has plenty of protein and healthy fat and it’s easy to make.  And if you’re short on time, instead of rolling them into balls, just press them into a baking dish! I’ll line a 9×11 baking dish with parchment paper, press the mixture very firmly into the dish, and then freeze it for a 10 minutes (or half a day because I forgot about them!) to help them set up.  Pull it from the freezer, lift the parchment paper out, cut it into squares, and serve them up!

Ingredients
  • 1/2 cup honey
  • 1 cup sun butter
  • 1/4 cup coconut oil
  • 4 cups crispy rice cereal
  • 4 scoops collagen peptides
  • 2/3 cup dairy-free chocolate chips
  • 1/2 cup dried cranberries
  • 1/3 cup unsweetened coconut shreds
Instructions
  1. In a small saucepan over low heat, combine the honey, sun butter, and coconut oil.  Stirring continually until completely melted, about 2-3 minutes. Remove from heat.

  2. In a large mixing bowl, combine the crispy rice cereal, collagen peptides and coconut shreds.  Stir together. Pour melted mixture over the top and stir together using a large spoon.

    Place in the freezer for 5 minutes to cool.

  3. Add the mini chocolate chips and dried cranberries.  Fold together. Scoop out a small amount (about 2 tablespoons) and shape into a round ball.  Continue until all mixture has been shaped into balls.

  5. Place a piece of parchment paper in a 9×11 baking dish, place mixture into baking dish and press very firmly into the bottom of the dish.  Freeze for 10-15 minutes to set it up. Remove from freezer, remove from baking dish, cut into squares, and serve.

Recipe Notes

Store in a covered airtight container in the pantry, fridge, or freezer.
