BLUEBERRIES:
Oatmeal with fresh blueberries is one of the best varieties. I decided to turn the family-favorite oatmeal into a grab-n-go blueberry oatmeal bar. Fresh blueberries are a must for this recipe. Gently fold them into the batter and they’ll stay juicy and plump in the bars. I have tried frozen blueberries in this recipe, and they ‘do’ work, but as the blueberries thaw during the baking process, the batter becomes more moist and the bars don’t hold together quite as nicely. Fresh blueberries are the way to go for these bars!
GRAB-N-GO:
This school year as I have two boys going to school, I’ve learned the importance of having breakfasts prepped and ready for the morning. These blueberry oatmeal bars are very easy to make on the weekend, cut into bars, and have packaged up. If you’re the type who needs to bring breakfast with you, just grab one of the packaged bars as your heading out the door.
HOW TO MAKE:
Start with preheating the oven to 350 degrees. Spray an 8×8 baking dish and set aside.
Next, in a large mixing bowl add the gluten-free quick cook oats, hemp hearts, chia seeds, cinnamon, and sea salt. Stir together. Next add the dairy-free milk, honey, and vanilla extract. Stir until well combined. Add the fresh blueberries and fold into the batter.
Lastly, pour the batter into the prepared baking dish. Place in the oven and bake for 35-40 minutes. Remove from the oven and let cool completely before cutting into equal pieces. Then either serve right away or place the cut pieces in snack-sized baggies for grab-n-go breakfasts.

- 1 1/2 cups dairy-free milk (I used Vanilla Soy Milk)

- 1 tsp vanilla extract
- 1 1/2 cups fresh blueberries
