Breakfast Sausage and Egg Bake

Breakfast Sausage and Egg Bake is the perfect morning breakfast recipe.  A high protein breakfast that’s very filling, it’ll keep the family full all morning long.

Need to jazz up your normal breakfast routine?  We most certainly do! Sometimes we can get into a rut with breakfast.  Serving our normal oatmeal, scrambled eggs, pancake bites or waffles is all great and nice and healthy, but sometimes we need to jazz it up a bit.  Making a new recipe can get you out of that rut! Breakfast Sausage and Egg Bake is just the ticket for something new.

It’s the perfect breakfast recipe that is full of quality protein. An egg bake always has eggs, right?  They’re a great source of protein! And when you add fresh ground sausage, well now you have even more protein added to your breakfast!  Of course we didn’t stop at just eggs and sausage. I’ve added veggies too of course! In my life, breakfast isn’t breakfast without vegetables being added!  I did keep this one a little more kid friendly with only adding zucchini and green onions. If you’re a veggie lover, feel free to add a few more options!

I’m a firm believer of no limits in the kitchen!  Just because a recipe has only one or two vegetables listed in the ingredient list, doesn’t mean you can’t add a couple more!  If you love a different vegetable than what the recipe lists, then swap out the listed vegetable for you favorite one! Yes, broadening your horizons and trying new veggies is always a good thing, but really guys sometimes it just comes down eat the damn veggies.  If it’s only your favorites and you’re not eating every other single vegetable, that’s perfectly fine! There are no limits in the kitchen when creating your meals. Get creative and use a recipe as a guide…stray from the recipe and be creative about adding your favorite veggies!

Are you an egg lover, but are a little tired of just scrambled eggs or fried eggs?  My Breakfast Sausage and Egg Bake will be the perfect ticket to spruce up your egg-lover breakfast.  Personally I haven’t been able to eat eggs for a little over a year now. I’m not giving up hope that someday I’ll be able to eat them again (they’re so healthy and yummy!) but for now, I make them for my husband and my kids.  The kids absolutely love eggs! And this sausage and egg bake was perfect for their breakfast and proved to be a great quick on-the-go breakfast for my husband! I hope you give it a try!

Ingredients
  • 6 eggs
  • 1 lb ground sausage
  • 1 tsp paprika
  • 1/4 tsp sea salt
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 cup dairy free milk
  • 1 cup chopped zucchini
  • 1/4 cup diced green onion
Instructions
  1. Preheat oven to 350 degrees.  Spray 9×12 baking dish with cooking spray. 

  2. In a large skillet over medium heat, begin browning the ground sausage.  Using a spatula break the sausage into bite size chunks.  Add the paprika, sea salt, onion powder, and garlic powder.  Mix into the ground sausage.  Continue to cook, stirring occasionally for 10-12 minutes or until sausage is cooked through.

  3. In a large mixing bowl add the eggs and dairy free milk and whisk together.  Add the chopped zucchini and diced green onion.  Stir.

  4. Once ground sausage is done cooking, drain excess fat using a colander.  Add the sausage to the mixing bowl of eggs/milk/veggie combo.  Stir together.

  5. Pour mixture into the prepared baking dish.  Bake for 30-40 minutes or until cooked all the way through.  Let cool for 5 minutes, cut into 12 equal pieces and serve.   

Recipe Notes

Store leftovers in an airtight container in the fridge for up to 5 days.
