Super simple meals don’t have to be void of nutrition.  An easy meal to make doesn’t have to be a highly processed box food.  It can be a highly nutritious, protein dense meal that only takes 5 ingredients.  30 Minute Broccoli and Salmon Bake sports the highly nutritious salmon fillets that are high in both omega-3 fatty acids, protein and a host of B vitamins.  A nice serving of broccoli, mushrooms, and asparagus makes this meal even more nutritious and micronutrient dense.

We are so lucky at our house.  Every single member in our house is a salmon lover.  This makes me incredibly happy since salmon is so nutritious and I when I make this meal, I know everyone will be eating it!  It’s close to every week that we make 30 Minute Broccoli and Salmon bake at our house. We’ll add some rice or cauliflower rice with it and the entire meal is eaten up by all the kids!  Keeping them healthy and full for the rest of the evening.

30 Minute Broccoli and Salmon Bake

To make this super simple meal you’ll start with covering a baking sheet with parchment paper.  Everything goes onto the baking sheet at that same time. I like adding the salmon fillets, drizzling them with avocado oil and a few lemon wedges squeezed right onto them.  All the chopped veggies get tossed in a little avocado oil and then poured onto the baking sheet. A final few lemon wedges get squeezed over the veggies and then she’s ready to pop into the oven.  Thirty minutes later and the entire meal is ready to be served!

I love sharing recipes that are easy to make and also easy on the budget.  Pretty much all of my 30 minute meals are budget friendly, like my 30 Minute Chicken Skillet and Avocado Lime Beef Bowl. With this brand new recipe, 30 Minute Broccoli and Salmon Bake it can be budget friendly too.  Sometimes salmon fillets can be a little higher priced, here in our small town they’re $9.99/lb. A lot of times I’ll arrange our menu so we have a meatless meal in the week to help budget in the price of the salmon.  BUT…if you want to be really budget conscious, grab a can of salmon! I almost always buy a package of canned salmon at Sam’s Club for quick lunches and I’ve used it in this recipe in place of the salmon fillets. It works great and is super budget friendly!

Salmon, broccoli, asparagus, mushrooms

Ingredients
  • 2-3 salmon fillets
  • 2-3 tbsp avocado oil
  • 3 cups broccoli florets, chopped
  • 2 cups asparagus, chopped
  • 1 cup mushrooms, sliced
  • 2 lemons, cut to wedges
  • 1/2 tsp sea salt
Instructions
  1. Preheat oven to 325 degrees.  Line a baking sheet with parchment paper.

  2. Place the salmon on the parchment paper lined baking sheet, drizzle with 1-2 tablespoons avocado oil and 2-3 lemon wedges squeezed over the top.

  3. Place the chopped veggies in a large mixing bowl and toss with the remaining avocado oil.  Pour onto the baking sheet. Squeeze the remaining lemon wedges over the entire pan and sprinkle with sea salt.

  4. Bake for 25-30 minutes or until salmon flakes easily with a fork.  

    Remove from oven and serve.

Recipe Notes

Store leftovers in a covered glass container and store in the fridge for up to 5 days.
