The one part of this recipe that makes it ready in under 30 minutes is because we’re using leftovers!  Yes, leftovers. I am a big supporter of using everything from the fridge; all leftovers must be used. When we make a big roast with potatoes and carrots we always have a large amount of roast leftover.  Which I am not complaining…I love having those leftovers for the next couple days’ lunches. Making Avocado Lime Beef Bowl with Kale is a great way to use up beef roast leftovers! So much better than letting it go to waste!

Making Avocado Lime Beef Bowl with Kale is done in a couple easy steps.  First, in a large skillet add the frozen cauliflower rice, cover with a lid and let it cook over medium heat for about 10 minutes or until it’s completely thawed.  Next add the leftover shredded roast beef, kale, cilantro, and lime juice. Stir it all together and cook for another 10-15 minutes or until the kale has turned bright green and the beef is hot all the way through.  Lastly, serve in a big bowl and drizzle with Primal Kitchen’s Cilantro Lime Dressing, a lime slice and 2 avocado slices.

Ingredients
  • 1 bag frozen cauliflower rice
  • 1 1/2 cups shredded roast beef
  • 1 bunch fresh cilantro (about 1 cup), chopped
  • 2 limes (1 squeezed, 1 sliced)
  • 3 cups raw kale
  • 1/2 tsp sea salt
  • 1/2 tsp coarse ground pepper
  • 1 avocado, sliced
  • 1/2 cup Primal Kitchen Cilantro Lime Dressing
Instructions
  1. In a large skillet over medium heat add the frozen cauliflower rice.  Cover and cook for 10 minutes or until thawed.

  2. Next add the shredded roast beef, kale, cilantro, lime juice, sea salt and pepper.  Stir together and cook for another 10-12 minutes or until heated all the way through.

  3. Remove from heat.  Serve in a large bowl.  Drizzle with dressing and top with avocado slices and lime slices.
