Whole30 Slow Cooker Sweet Potato Chili is loaded with sweet potatoes, carrots and pumpkin. It still has the great traditional spicy flavors with extra chili powder, onion powder and a dash of garlic. I’ve left out the beans (never a favorite part for me anyway!) and replaced them with nutrient dense vegetables and a hefty dose of protein rich beef.
I’ve come to the conclusion that any meal made in the slow cooker is a life saver for moms. Just this week I’ve forgotten to pull items from the freezer for that night’s dinner three times! You guys, three times!! I’ve been a little preoccupied with a list of other things and having dinner made on time has fallen to the wayside. Making dinners in the slow cooker sets me up for success. I do the quick 20 minutes (or less) prep in the morning, turn the slow cooker on and I know dinner will be on time that night!
Chili is one of those traditional meals that almost everyone loves. The spiciness of the chili powder, the tomato base, the chunks of ground beef and sweet potatoes. It’s a soup that will warm you up on a cold day! And let’s not forget about all the toppings you can add! My favorite way to enjoy a bowl of Whole30 Slow Cooker Sweet Potato Chili is to first add a big handful of fresh spinach in the bowl, then the chili, and lastly add a few slices of avocado and a spoonful of coconut cream. I use full fat canned coconut milk and use a spoonful of the thick cream that’s on top. The avocado and coconut cream help cool the spiciness of the chili and the added spinach is simply amazing with a bowl of soup. I hope you try it!
- 1 lb ground beef, browned
- 1 29 oz can tomato sauce
- 1 14.5oz can petite diced tomatoes
- 2 cups water
- 1 medium sweet potato, peeled and diced
- 3 medium carrots, peeled and diced
- 1 cup pumpkin puree
- 1 Tbsp chili powder
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tsp sea salt
- 1/2 tsp ground black pepper
- spinach
- coconut milk cream
- avocado

In a slow cooker add all the ingredients. Stir well.

Cook on low for 6 hours or high for 4 hours.

Serving:
Place a handful of spinach in each bowl, add chili on top of spinach and finish with a spoonful of coconut milk cream and avocado slice.
