Flourless Plantain Cake with Strawberries

Every time I make this cake, the kids are asking for a piece before it has even cooled completely!  It’s such a simple cake with great texture from the plantain, and a touch of sweetness from the strawberries.  If you would like it be a bit more “fluffy” go ahead and add an egg, but since I don’t digest eggs well, I forgo it.  A few times I’ve added a teaspoon of cinnamon to the batter to add to the flavor. It’s certainly yummy with cinnamon, but the family voted, and a more simple and plain cake won the vote!

Fresh fruit is always a plus in the winter!  Sometimes we’ll luck out and have a really good selection at the grocery store, but being in the Midwest the prime time for fresh fruit is summer.  So many times we have to opt for frozen fruit. Which can be just as delicious! For this Flourless Plantain Cake with Strawberries we add the fruit to a small saucepan and over low heat reduce the fruit until it’s thick.  Almost resembles a jam, and we spoon it over each piece of cake.

Grab your food processor and make this cake in under 10 minutes!  All it takes is two plantains and a tablespoon of coconut oil (collagen powder if you’re using it).  Process them until they’re nice and fluffy and then pour the batter into a 8×8 baking dish and bake for 25 minutes.  While the cake is baking, add the strawberries to a small saucepan and over low heat start reducing them. With an occasional stir, the strawberries will take about 15 minutes to reduce.  Once everything is done cooking and baking, let them cool enough to cut and remove from the pan. Place them on plates, top with the reduced strawberries and serve to your family and friends.

Ingredients
  • 2 medium plantains, peeled
  • 2 Tbsp coconut oil
  • 1/2 cup frozen strawberries

  1. Preheat oven to 350 degrees. Spray an 8×8 baking dish with cooking spray. 

  2. In a food processor add the plantains and coconut oil and collagen powder if using. Process for 1-2 minutes or until batter is fluffy and all chunks are mixed in.  

  3. Pour batter into the prepared 8×8 baking dish. Place in the oven and bake for 25 minutes.

  4. In a small saucepan over low heat, add the frozen strawberries. Stirring occasionally, cook for 15 minutes or until strawberries have reduced and are getting thick. Remove from heat. 

  5. Remove cake from oven. Let cool. Cut into 6 slices and serve on a plate, topping with a generous spoonful of reduced strawberries.

  1. Hi Ana , I am amazed at this cake. I will certainly try it. However I didn’t really see specification. Was the plantains cooked. Or. Raw.? Also could powder plantain work . I use powder plantain to make Cuban Plantain Soup. Have you tried it? It is Yummy.

    1. Hi Marisol, thanks for the questions! Use a raw plantain as you’ll be baking it once it’s been through the food processor and into the baking dish. I’ll make the changes on the recipe 😊 I have not tried it using plantain powder, but I’m highly doubtful it would work the same, although if you’re feeling adventurous go ahead and try 😉
