Instant Pot Lemon Pepper Cod Fish

I have to be honest here, this is not my recipe. My husband created this recipe! He’s normally not in the kitchen very often, but there were a few times he was left to fend for himself. With needing a lunch that was high in lean protein, he turned to cod fillets. I like keeping a bag of frozen cod in the freezer for quick dinner/lunch ideas for when plan B has to be administered! Using frozen cod fillets, a little rice, frozen broccoli, and a dash of lemon pepper, a highly nutritious meal is ready in 18 minutes.

How to make lemon pepper cod
In your Instant Pot, add the rice, broccoli, and water. Add the frozen cod fillets on top of the rice. Sprinkle with lemon pepper seasoning. Place the lid on the Instant Pot securely, turn the valve to seal then press ‘rice’. Once it’s done cooking, press ‘cancel’ and turn the valve to release the pressure (caution, this will be very hot!). Once the pressure pin has dropped, remove the lid from the Instant Pot. Serve the cod, rice, and broccoli.

- 4 frozen cod fillets
- 1 1/2 cups jasmine rice
- 2 cups water
- 3 cups frozen broccoli
- 3 tsp lemon pepper seasoning

In the Instant Pot add the rice, broccoli, and water. Stir. Add the frozen cod fillets on top of the rice. Sprinkle the lemon pepper seasoning on top.

Keep any leftovers in an airtight container in the fridge for up to 3 days.
