No-Bake Turmeric Carrot Date Balls
These No-Bake Turmeric Carrot Date Balls are soft and chewy with an amazing taste. The sweet dates and carrot shreds mix perfectly with the spicy gut-healing turmeric powder. They’re easy to make, no-bake, and a freezer-friendly snack.

Dates
Carrots
Coconut shreds
Turmeric powder
Collagen powder
EASY TO MAKE:
In a medium bowl add the dates and enough hot water to completely cover them. Let them soak for 5 minutes to soften. Drain the water from the bowl and gently squeeze excess water from the dates.
In a food processor add the carrots. Pulse for 30 seconds, or until all pieces are cut to fine shreds.
To the food processor, add the softened dates, coconut shreds, turmeric powder, and collagen powder. Place the lid on the food processor and turn on. Process until all dates are chopped and the mixture is rolling into a wet dough ball. About 15 seconds on, scrape sides, 15 seconds on; continue until the mixture is smooth and formed into a large dough ball. Turn the food processor off and remove the lid and blade. Begin scooping the dough out to roll into balls – about the size of a golf ball or 2 tablespoons. Press and roll the dough between the palms of your hands. The dough will be slightly sticky but will roll into balls. Continue to roll out the date balls until all mixture is used up.
OPTIONAL:
Roll the date balls in finely shredded coconut.
Eat or save for later. As tempting as it is to eat up all these turmeric date balls in one sitting, saving them for an after-dinner dessert or mid-afternoon snacks is very rewarding.
Keep the date balls in a covered container in your pantry or (my favorite way) keep in the freezer. Yes, these date balls are freezer-friendly and oh, so delicious when frozen. Popping a frozen date ball as a mid-afternoon snack is amazing. The date ball is cold and very firm, but definitely not frozen solid. They stay chewy! Pure perfection!
