Here they are! I’ve been teasing you guys with this recipe for the last few weeks over on Instagram. I have been making these for a couple of months and more recently I’ve been sharing photos on my Stories. I asked if anyone would be interested in the recipe, and guess what? Every.single.person said YES! So I made a brand new batch to photograph (so hard to do 😉 and limited my sampling to only one!) and am finally ready to share my easiest recipe ever!
Since doing the AIP (Autoimmune Protocol) my snack options were pretty much vegetables and a source of protein. I SO wanted something a little sweet. I’ve been overcoming a sweet tooth and am so happy to say that I think I have finally broken my relationship with sugar. I used to crave something sweet after each meal or basically whenever I was bored. BUT I haven’t needed to do that in quite awhile. My want for something sweet now is just a want that comes and goes. I don’t feel like I’m going to go crazy if I don’t get a “sugar fix”. Making my Lime Date Balls Nut Free are the perfect sweet treat for once a week.

To make these Lime Date Balls Nut Free you’ll need a food processor. Just trust me. I’ve tried to make them in a blender, even a high-speed blender and it just would not work. So grab your food processor and add the three ingredients. Process them together for 20 seconds or until the mixture is well blended, sticky and turning into a nice “ball”. Pop the top of the food processor off and start scooping out the mixture (a tablespoon amount) and roll it in the palm of your hands. Simply continue that process until all the mixture is gone. The simplicity of this recipe is great. Makes it feel like a minimalist recipe 😉 This recipe will make approximately 24 date balls.
- 2 cups dates, pitted
- 2 cups unsweetened coconut shreds
- 1 lime, zest and juice
- 4 scoops collagen peptides

In a medium mixing bowl add the dates. Add enough hot water to cover the dates. Let sit for 3-5 minutes. Drain water and lightly squeeze dates.

In a food processor, add the soaked dates, unsweetened coconut shreds, lime zest and juice, and collagen peptides.

Pulse a few times to break up the dates. Process for 20-30 seconds or until mixture is well incorporated, sticky and forming a large ball.

Remove the mixture from the food processor. Scooping a tablespoon size of mixture out, roll it between the palms of your hands. Continue until all mixture is rolled out. Makes approximately 24 balls.
Store in an airtight container in pantry or freezer.
