Ingredients
  • 2 cups dates, pitted
  • 2 cups unsweetened coconut shreds
  • 1 lime, zest and juice
  • 4 scoops collagen peptides
Instructions
  1. In a medium mixing bowl add the dates. Add enough hot water to cover the dates. Let sit for 3-5 minutes. Drain water and lightly squeeze dates.

  2. In a food processor, add the soaked dates, unsweetened coconut shreds, lime zest and juice, and collagen peptides.

  3. Pulse a few times to break up the dates. Process for 20-30 seconds or until mixture is well incorporated, sticky and forming a large ball.

  4. Remove the mixture from the food processor. Scooping a tablespoon size of mixture out, roll it between the palms of your hands. Continue until all mixture is rolled out. Makes approximately 24 balls.
