Ingredients
  • 2 1/2 cups gluten-free quick oats
  • 1/2 cup honey
  • 2 tsp vanilla
  • 1/2 cup unsweetened coconut shreds
  • 1/2 cup raw cashews
  • 1 lemon, juice and zest
  • 1 Tbsp poppy seeds
  • 1/2 Tbsp chia seeds
  • 1 Tbsp hemp hearts
Instructions

  2. In a food processor work bowl, combine all ingredients.  Place lid on securely, process for 30 seconds. Remove lid, scrape down sides with a small spatula, replace lid and process for another 30-40 seconds or until a large dough ball begins to form.   3. Turn food processor off, remove lid, and scoop out mixture one spoonful at a time.  Place each rounded spoonful of mixture on to the prepared baking sheet. Continue until all mixture is used up.
