Gluten-free Chocolate Chip Energy Bites

Ingredients
  • 1/2 cup honey
  • 1 cup sun butter
  • 1/4 cup coconut oil
  • 4 cups crispy rice cereal
  • 4 scoops collagen peptides
  • 2/3 cup dairy-free chocolate chips
  • 1/2 cup dried cranberries
  • 1/3 cup unsweetened coconut shreds
Instructions
  1. In a small saucepan over low heat, combine the honey, sun butter, and coconut oil.  Stirring continually until completely melted, about 2-3 minutes. Remove from heat.

  2. In a large mixing bowl, combine the crispy rice cereal, collagen peptides and coconut shreds.  Stir together. Pour melted mixture over the top and stir together using a large spoon.

    Place in the freezer for 5 minutes to cool.

  3. Add the mini chocolate chips and dried cranberries.  Fold together. Scoop out a small amount (about 2 tablespoons) and shape into a round ball.  Continue until all mixture has been shaped into balls.

  5. Place a piece of parchment paper in a 9x11 baking dish, place mixture into baking dish and press very firmly into the bottom of the dish.  Freeze for 10-15 minutes to set it up. Remove from freezer, remove from baking dish, cut into squares, and serve.

Store in a covered airtight container in the pantry, fridge, or freezer.
