Slow Cooker Turmeric Rice with Chicken Recipe (Dairy Free)

Whether you call this dinner Slow Cooker Chicken and Rice or Crockpot Chicken and Rice, it’s one meal you will want to add to your menu right away. Made with just 6 ingredients and 10 minutes of hands-on time, this is a quick and easy meal. Plus all the ingredients are easily found at all grocery stores!
BUDGET-FRIENDLY DINNER PLEASE
If you’re like me, then you love a good healthy budget-friendly recipe. For me, I’m feeding a family of 6 and they’re all hungry boys and I’m a powerlifting mama that certainly eats a lot. So serving a healthy budget-friendly meal that’s going to fill us up is a must in this house.
INGREDIENTS FOR TURMERIC RICE WITH CHICKEN
Chicken breasts – chicken breasts are a lean source of protein, but you can also use chicken thighs
Coconut milk – canned coconut milk is to be used, not coconut milk in the refrigerator aisle
Turmeric powder – I like the turmeric powder from Further Foods and have ordered it many times. Make sure your turmeric powder has black pepper added to the ingredient list
Jasmine rice – be sure to use jasmine rice for this recipe, I have not recipe tested a longer-cooking rice such as long grain rice.
Frozen broccoli – frozen broccoli is a great budget-friendly item, but if you prefer fresh, go ahead and use it
Chicken broth – read the ingredient list for a healthy chicken broth. I like to try and use an organic chicken broth, sometimes finding a great-tasting one at Aldi
Sea salt – use sea salt or what you have on hand
Black pepper – my favorite is cracked black pepper, but feel free to use what you have on hand
HOW TO MAKE THIS SLOW COOKER CHICKEN AND RICE
- In a slow cooker, add the chicken breasts, canned coconut milk, and turmeric powder. Let cook on LOW for 4 hours or HIGH for 2 hours.
- Remove the chicken and shred.
- Place the shredded chicken back in the slow cooker (with all the juices still in the slow cooker) and add the rice, chicken broth, broccoli, and sea salt and pepper. Stir and let cook for 1 hour on high or 1 ½ hour on low.
- Ready to serve
HOW TO STORE LEFTOVERS
Keep the leftovers in an airtight container in the fridge for up to 3 days. Naturally, as rice sits in any liquid, it will continue to soak it up. So when re-heating the chicken and rice, add a little water (about ¼ cup water to 1 cup of chicken and rice) to the dish and stir together so it doesn’t dry out as you re-heat it.
GOLDEN TURMERIC
Adding golden turmeric to this dinner is a healthy and flavorful idea. Turmeric has many health benefits:

- Anti-inflammatory
- Improves digestion
And golden turmeric is very delicious with its warm and slightly spicy taste.
- 2 chicken breasts
- 1 13.5 oz canned coconut milk
- 1 1/2 teaspoons turmeric powder
- 1 cup jasmine rice
- 2 1/2 cups frozen broccoli
- 2 cups chicken broth
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper

In a slow cooker, add the chicken breasts, canned coconut milk, and turmeric powder. Let cook on LOW for 4 hours or on HIGH for 2 hours.
