A healthy and budget-friendly snack
These Peanut Butter Apple Rings with Chocolate Chips are a healthy snack (for adults too!) and they’re a budget-friendly kid’s snack. When life gets busy it’s easy for us to reach for store-bought snacks. I’m not dissing store-bought snacks, I’ve bought my fair share of snacks and bars for my family! Ingredients:
Apples – we love pink lady apples but use your favorite variety
Peanut butter – we love this peanut butter but use what you have. Be sure to read the ingredient list for added sugars and oils! If you have a peanut allergy, feel free to use sunflowers seed butter, almond butter, or any butter that best fits your needs.
Chocolate chips – Enjoy Life has the best tasting dairy-free chocolate chips in my opinion
Chopped peanuts – finely chopped peanuts like this one add a fun crunch to this snack
Unsweetened coconut shreds – this one is the one we use
How to put these apple ring donuts together
Wash and dry the apples. Slice the apples into rings about ½”-¾” thick. Cut the core out of each slice.
Spread one side of the apple rings with peanut butter. Sprinkle with chocolate chips, finely chopped peanuts, and unsweetened coconut shreds. Serve.
Best served right after making.
- 2 apples, pink lady variety or your favorite variety
- 1/4 cup creamy peanut butter
- 1/4 cup dairy-free chocolate chips
- 2 Tbsp finely chopped peanuts
- 2 Tbsp unsweetened coconut shreds

Wash and dry the apples. Slice the apples into 1/2"-3/4" thick rings. Cut the core from each slice.

Spread one side of the apple rings with peanut butter. Sprinkle with chocolate chips, finely chopped peanuts, and unsweetened coconut shreds. Serve.
