Paleo Chocolate Chip Cookie Dough Bites
My Paleo Chocolate Chip Cookie Dough Bites with a dairy-free chocolate drizzle are so irresistible. A soft and chewy cookie dough bite that’s easy to make.
Here’s my very first cookie dough recipe! Every time I see a cookie dough bite my mouth waters. Because I’m a lover of sweets and chocolate – I had to try making some. I went with an almond flour base for these cookie dough bites and I’m so glad I did. The texture is great with the almond flour and the nutty flavor with the chocolate is epic.
HOW TO MAKE THEM:
Line a baking sheet with parchment paper and set aside.
In a large mixing bowl, stir together the almond flour and coconut flour. Add the vanilla extract, melted coconut oil, and maple syrup. Stir together. Add the chocolate chips and fold them into the dough.
Using an ice cream scoop, scoop out the dough and place in perfect rounds on the parchment-covered baking sheet. If you don’t have an ice cream scoop, take a heaping spoonful and roll it in your hands to make a perfect cookie dough round.
Repeat until all cookie dough bites are on the baking sheet. Will make one dozen.
Next, add ¼ cup chocolate chips and ¼ tsp coconut oil to a small saucepan. Over low heat, melt the chocolate, stirring constantly with a small spatula. Once all the chocolate is melted, use a spoon and drizzle the chocolate over the cookie dough bites.
Let the chocolate set. Serve or place in an airtight container and store in the pantry or the freezer.
CAN I FREEZE THEM?
Short answer, YES! These cookie dough bites are freezer-friendly. Store them in an airtight container in the freezer for up to 2 months. Because of the ingredients I chose for these Paleo bites, they don’t freeze solid. They’re a firm version of the chewy bites when you eat them right from the freezer. You can pull a couple from the freezer and pack them in your lunch. They’ll be perfectly thawed for your after-lunch dessert.
CHOCOLATE DRIZZLE:
The chocolate drizzle is optional, but why wouldn’t you? Really though, a little extra chocolate on each bite is like heaven. Adding the chocolate drizzle is very easy, takes an extra 5 minutes and adds a little more chocolate taste that makes these Paleo Chocolate Chip Cookie Dough Bites irresistible!
