Bacon + ranch + sweet potatoes = the ultimate fall comfort food. Hands down this is one of the best dishes you’ll make this fall. The flavors from all three ingredients mix together so well. The sweetness from the sweet potato, smoky flavor from the bacon, and the garlic/dill flavor from the ranch. Add this as a side dish to any meal to make it simply amazing.
Bacon Ranch Stuffed Sweet Potatoes is a simple recipe to make. Pop the sweet potato in the oven for 30-35 minutes. While it’s baking, cook the bacon, cut the avocado, and whisk together the homemade ranch. I use my Whole30 Ranch Dressing recipe so I know it’s Whole30 approved and only clean ingredients. Pull the sweet potatoes from the oven, cut them lengthwise, fluff the insides with a fork, and then sprinkle on the bacon, avocado, and ranch dressing. So simple!!
We love serving these Bacon Ranch Stuffed Sweet Potatoes with baked chicken, meatballs, or my all-time favorite Whole30 Chicken Ranch Poppers. Making for a nice balanced meal. I’m always pushing for enough protein in every single meal, so serving these stuffed sweet potatoes with some lean protein is my favorite way to serve them.
- 4 medium sweet potatoes
- 8 oz bacon (applegate uncured bacon)
- 1/2 avocado, diced
- 1 batch Whole30 Ranch Dressing http://anaankeny.com/whole30-ranch-dressing/
- sea salt & pepper to taste

Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Wash and dry the sweet potatoes. Place on baking sheet and bake for 30-35 minutes or soft.

Cook bacon in a large skillet according to package. Or line a baking sheet with tin foil, place strips of bacon on foil, cover with another sheet of tin foil. Bake for 20 minutes or until desired crispiness. Remove from the oven or skillet and crumble to bite-size pieces.

Remove sweet potatoes from oven. Slice lengthwise and using a fork ‘fluff’ the insides. Add crumbled bacon, diced avocado, and a dash of sea salt & pepper. Drizzle the Whole30 Ranch Dressing on top of sweet potatoes. Serve.
Store leftovers in an airtight container in the fridge for up to 5 days.
