Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
In a small saucepan heat the honey and coconut oil over medium heat. Stirring until a low boil. Continue a soft boil for 2 minutes. Remove from heat.
In a large mixing bowl combine the remaining ingredients. Add the honey/coconut oil and fold in using a spatula.
Spread evenly onto the prepared baking sheet. Bake for 20 minutes. Stirring after 10 minutes.
Store in an airtight glass container for 10-12 days.
