Line a baking sheet with parchment paper.
In a small saucepan over low heat, add the chocolate chips and coconut oil. Stirring constantly, melt together. Once completely melted, remove from heat.
Peel the bananas and slice into 1/2" thick rounds. Add a small amount of peanut butter (about 1 tsp) to a banana round, then place a pretzel twist on top of the peanut butter, then top with another banana round. Dip in the melted chocolate.
Place the banana bite on the parchment-covered baking sheet. Continue this process until all banana rounds are used up. Let set until the chocolate has hardened. May place in the freezer for a quick 5 minutes to speed up the setting process. Serve and enjoy!
Best served right after making.
Freezer instructions: place finished banana bites on a baking sheet, place in freezer until frozen (about 1 hour), remove from freezer, place in a freezer-friendly container, and freeze for up to one month. Serve frozen, do not let thaw.
For nut-free bites, use sunflower seed butter.
