Preheat the oven to 350 degrees. Spray an 8x8 baking dish with cooking spray or line with parchment paper.
In a mixing bowl mash the banana. Add the egg and cane sugar. Cream together. Add the vanilla extract and avocado oil. Stir.
Add the cassava flour, sea salt, baking soda, and quick cook oats. Stir together. Fold in the chocolate chips and chopped pecans
Spread evenly into the prepared 8x8 baking dish. Top with chocolate chips, chopped pecans, and coarse sea salt. Bake for 25 minutes or until lightly golden brown on the bottom and sides. Remove from the oven and let cool before slicing into 9 even bars.
