Garlic Butter Chicken with Lemon

Ingredients
  • 4 chicken breasts
  • 2 Tbsp dairy-free butter of choice
  • 3 Tbsp minced garlic
  • 2 lemons, sliced
  • 3 cups broccoli, fresh or frozen
  • 1 1/2 tsp sea salt
  • 1 tsp coarse ground pepper
Instructions
  1. In a skillet over medium heat, melt the butter. Add the garlic and stir. Add the chicken breasts, sprinkle with sea salt and pepper, place the lemon slices on the chicken, cover with a lid, and let cook for 10-12 minutes.

  2. Remove the lid, turn the chicken over, replace the lemon sliced on top of the chicken, replace the lid, and let cook for 10-12 minutes. Remove the lid and let cook for 5 minutes or until cooked through.

  3. Remove the chicken from the skillet. Using the same skillet over medium heat, add the broccoli, toss to coat in remaining butter and garlic. Cook for 5-8 minutes or until the broccoli is bright green.

  4. Remove from the skillet and serve with the cooked chicken.
