No-Bake Turmeric Carrot Date Balls

Ingredients
  • 2 cups dates, pitted
  • 2 1/2 cups unsweetened coconut shreds
  • 1 1/2 scoops turmeric powder
  • 3/4 cups raw pepitas
  • 1 cup carrots (roughly 20 baby carrots)
  • 6 Tbsp collagen peptides
Instructions
  1. In a medium bowl add the dates and enough hot water to completely cover them. Let them soak for 5 minutes to soften. Drain the water from the bowl and gently squeeze excess water from the dates.

  2. In a food processor add the carrots. Pulse for 30 seconds, or until the carrots are finely shredded.

  3. To the food processor, add the softened dates, coconut shreds, turmeric powder, and collagen peptides. Place the lid on the food processor and turn on. Process until all dates are chopped and the mixture is rolling into a wet dough ball. About 15 seconds on, turn off, scrape sides, 15 seconds on; continued until the mixture is smooth and formed into a large dough ball.

  4. Turn the food processor off and remove the lid and blade. Begin scooping the dough out to roll into balls - about the size of a golf ball or 2 tablespoons full. Press and roll the dough between the palms of your hands. The dough will be slightly sticky but will roll into balls. Continue to roll out the date balls until all mixture is used up.

Recipe Notes

Optional:  roll the date balls in finely shredded coconut.

Serve at room temperature or chill before serving.

Freezer-friendly.  Place in a freezer-friendly bag/container, seal, freeze in the freezer for up to 3 months.
