Paleo Sweet Potato Burger Sliders

Ingredients
  • 2 large sweet potatoes
  • 1 Tbsp avocado oil
  • 2 Tbsp Everything But The seasoning
  • 1 lb ground beef
  • sea salt
  • ground black pepper
Burger Topping Options:
  • leaf lettuce
  • bacon
  • tomato
  • avocado slices
  • mustard
Instructions
  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. Wash and dry the sweet potatoes. Cut off the ends of the sweet potato and slice the middlemost part of the sweet potato to 1/2" thick slices. Each sweet potato should give 4- 1/2" slices.

  2. Rub each slice, front and back, with avocado oil. A very small amount for each slice. Place them on the parchment-covered baking sheet, keeping space between each sweet potato round. Sprinkle with Everything But The seasoning. Flip the sweet potatoes over and sprinkle again.

  3. Place the prepared sweet potatoes in the oven and cook for 10 minutes. Remove from the oven, turn each potato round over, then bake for additional 5-7 minutes or until sweet potatoes are just beginning to soften.

  4. Press the ground beef into 4" round patties about 1/3" thick. Sprinkle with sea salt and ground pepper. Cook in a skillet over medium heat or on the grill. Cook for 8 minutes, flip and cook for an additional 8-10 minutes or until cooked all the way through.

  5. Remove the sweet potato rounds from the oven. Remove the burgers from the skillet (or grill) and build the burger sliders topping with any of the burger topping options. Serve immediately.
