Ingredients
  • 1 4-6 oz salmon fillet (skin on)
  • 2 Tbsp avocado oil
  • 2 Tbsp Chili Lime Seasoning Blend (Trader Joe's)
  • 1 lime
  • 1 batch Easy Mango Salsa with Lime (link in post)
Instructions
  1. Preheat the oven to 325 degrees. Line a baking sheet with parchment paper.

  2. Place the salmon fillet, skin side down, on the baking sheet.

  3. Rub the avocado oil onto the salmon. Sprinkle the chili lime seasoning blend evenly on the salmon fillet.

  4. Cut the lime in half and squeeze fresh lime juice onto the salmon from one half of the lime. Cut the other half of the lime into thin rounds and place on top of the salmon fillet.

  5. Bake the salmon for 25 minutes, or until just cooked through. (see notes below)

Remove from the oven and spoon the mango salsa on top of the salmon. Serve.

Recipe Notes

To test if the salmon is done, poke a fork into the salmon and twist, if the fish flakes (see photo in post) the salmon is cooked through.  If the salmon appears too juicy, bake for another 5-8 minutes and test again.

Store leftovers in the fridge in an airtight container for up to 5 days.
