Line a baking sheet with parchment paper and set aside.
In a large mixing bowl, stir together the almond flour and coconut flour. Add the vanilla extract, melted coconut oil, and maple syrup. Stir together. Add the chocolate chips and fold them into the dough.
Using an ice cream scoop, scoop out the dough and place in perfect rounds on the parchment-covered baking sheet. If you don't have an ice cream scoop, take a heaping spoonful and roll it in your hands to make a perfect cookie dough round.
Repeat until all cookie dough bites are on the baking sheet. Will make one dozen.
Add 1/4 cup chocolate chips and 1/4 tsp coconut oil into a small saucepan. Over low heat, melt the chocolate, stirring constantly with a small spatula or whisk. Once all the chocolate is melted, use a spoon and drizzle the chocolate over the cookie dough bites.
Let the chocolate set. Serve or place in an airtight container. Store in the pantry or in the freezer.
