In your Instant Pot place the trivet and 3 cups of water.
Rinse your whole chicken under cool water and remove all the extras from the cavity of the chicken. Place on a platter (as a working place) or a glass cutting board.
Rub the avocado oil all over the whole chicken. Sprinkle the dried sage and freshly minced garlic over the entire chicken, making sure to add some to the cavity of the chicken as well.
Place the chicken on the trivet, breast side up, in the Instant Pot. Securely place the lid on the Instant Pot and turn the valve to ‘seal’. Press ‘Pressure Cook’ and manually adjust the time to 36 minutes.
Let cook. Once the Instant Pot beeps and the pressure cooking is done, let it sit until the pressure valve drops. About 10 minutes. Remove the lid and carefully remove the cooked chicken from the Instant Pot and place it on a cutting board or directly onto a serving tray.
Cook time variances:
For a whole chicken weighing 4-4.5 lbs, pressure cook for 28 minutes.
For a whole chicken weighing 5-5.5 lbs, pressure cook for 36 minutes.
For a whole chicken weighing 6-6.5 lbs, pressure cook for 44 minutes
Internal temperature of chicken must reach 165 degrees to be fully cooked.
