  1. Preheat oven to 375 degrees.  Line a baking sheet with parchment paper.  Wash and dry the sweet potatoes.  Place on baking sheet and bake for 30-35 minutes or soft.

  2. Cook bacon in a large skillet according to package.  Or line a baking sheet with tin foil, place strips of bacon on foil, cover with another sheet of tin foil.  Bake for 20 minutes or until desired crispiness. Remove from the oven or skillet and crumble to bite-size pieces.

  3. Remove sweet potatoes from oven.  Slice lengthwise and using a fork ‘fluff’ the insides.  Add crumbled bacon, diced avocado, and a dash of sea salt & pepper.  Drizzle the Whole30 Ranch Dressing on top of sweet potatoes. Serve.
