Instant Pot Garlic Butter Baby Potatoes

Instant Pot Garlic Butter Baby Potatoes are an easy and healthy side dish you can add to any weeknight dinner.  With the savory garlic and butter flavor, these baby potatoes will instantly be a favorite.

Do you struggle to find a good easy side dish? 

Coming up with the main entree is easy for me, but when it comes to an easy side dish, I can struggle.  My family loves potatoes so I decided to mix up the traditional mashed potatoes they love. With just a couple of simple ingredients and 15 minutes, I had these garlic butter baby potatoes on the table ready to serve.  I used a small bag of baby potatoes from Aldi’s, garlic cloves and dairy-free butter. These three simple ingredients tossed into the Instant Pot and in only 15 minutes, the perfect side dish is ready to serve!

ONLY 15 MINUTES:

Can it really be only 15 minutes to have potatoes ready?  Using the Instant Pot is a time saver for a weeknight dinner.  When creating your meal plan for the week, add these Instant Pot Garlic Butter Baby Potatoes to one of your weeknight meals.  You’ll saute the potatoes first then finish with a quick pressure cook for a few minutes to get the potatoes nice and tender.

HOW TO MAKE THEM:

Turn the Instant Pot to ‘Saute’ mode and manually adjust the time to 8 minutes.  Add the dairy-free butter and minced garlic to the Instant Pot. Using a wooden or plastic spoon, stir the garlic into the melting butter.  Once all the butter is melted, add the baby potatoes. Stir to evenly coat all the potatoes with butter. Let cook for 6 minutes, stirring occasionally.  

Press ‘cancel’ on the Instant Pot.  Add ½ cup of water to the Instant Pot, place the lid on securely and turn the valve to ‘seal’.  Press the ‘Pressure Cook’ button and manually adjust the time to 6 minutes. Let them cook for 6 minutes and then let them sit for 2 minutes or until pressure valve drops.  Remove lid and serve baby potatoes.

The cook time may vary a little for these Instant Pot Garlic Butter Baby Potatoes.  I used one bag of baby potatoes, a 1.5 lb bag of golden potatoes. I know there are other kinds/sizes of baby potatoes, so the cooking time will depend on which one you purchase.  Pressure cooking my 1.5 lb bag of yellow baby potatoes for 6 minutes was perfect! If you cook yours for 6 minutes and it’s not quite enough time, the potatoes aren’t quite soft enough, it’s perfectly okay to replace the Instant Pot lid and pressure cook for another 2-4 minutes.

  • 1 1.5 lb bag yellow baby potatoes
  • 2 Tbsp dairy-free butter
  • 3-4 clove garlic, minced
  • 1/2 cup water
  • salt & pepper to taste

Recipe Notes

Cook time may vary depending on size of baby potatoes.  If potatoes are not tender after 6 minutes of pressure cooking, replace lid on the Instant Pot, turn valve to ‘seal’ and cook for another 2-5 minutes.

Store leftovers in a covered container in the fridge for up to 4 days.
