- Chicken broth – a wonderful addition to this meal to keep the chicken moist while cooking and give added health benefits. I love this organic chicken broth from Proper Good or the organic chicken broth from Aldi for a budget-friendly option.
- Black pepper – coarse ground pepper such as this one, or use what you have on hand.
- Fresh herbs – fresh herbs give this dish wonderful extra flavor. I love using fresh rosemary, dill, or parsley depending on what I can find fresh for the time of year and which hummus flavor I choose.
How to make Slow Cooker Hummus Crusted Chicken
With just 10 minutes of hands-on time for this family dinner, it’s a great set it and forget it type recipe.
- Rinse the whole chicken under cool water cleaning out the cavity of the chicken (be sure to remove any ‘extras’ from the chicken that are often found in the cavity such as a bag with the gizard and/or neck). Pat dry with a paper towel then place in the slow cooker, breast side up.
- Spread the layer of hummus on the breast of the chicken, under the skin of the chicken, and around the wings and legs. Spread the hummus with a spatula or with your hand.
- Cut the lemons in half or in wedges. Squeeze fresh lemon juice over the top of the chicken (roughly the juice from one whole lemon) and fill the cavity of the chicken with the rest of the lemons.
- Carefully add the chicken broth to the slow cooker without pouring onto the top of the chicken as to keep the hummus in place.
- Sprinkle the coarse ground pepper on the chicken.
- Place the lid on the slow cooker and set on low for 6-8 hours or on high for 4-5 hours. Be sure the internal temperature reaches 165.
- Once done, remove the chicken from the slow cooker and place on a platter. Let rest for 10-15 minutes before cutting into the chicken.

How to store the leftovers
To keep leftovers fresh and moist, place in an airtight container with some of the cooked broth from the slow cooker. Keep in the fridge for up to 5 days.
