Thanks to everyone that voted on my Instagram Stories of their favorite granola bar recipes!  It truly helped me come up with these six varieties. I am a chocolate lover, so when I saw how many of you loved caramel, I knew I had to switch gears and include some sweet caramel options.

HOW IT WORKS:

I’ve created a “base” for the granola bar.  Just 5 simple ingredients that make a chewy granola bar that actually holds together.

1  Make the base recipe.

2  Choose a variety of granola bars.

3  Fold in the add-ins for that variety.

4  press into the Granola Bar Pan.

5  Freeze.

6  Remove from the freezer and pop them out of the granola bar pan.

SERVING

You can eat them as soon as they’re firm and lightly frozen, serving them as a snack or dessert.

OR

After popping them out of the Granola Bar Pan, put them into snack-sized baggies for quick on-the-go snacks.  I have a freezer container filled with a variety of granola bars all individually packaged so the kids can grab a snack when they need one and for tossing into their backpacks for mid-morning snacks at school.

6 Easy Granola Bar Recipes

1. ALMOND JOY

Just like the classic candy bar, these granola bars have almonds, chocolate, and coconut.  Nice and sweet with a chocolatey taste for your afternoon cravings.

Make the granola bar base, then add ¾ cup roughly chopped almonds, ½ cup dairy-free chocolate chips, and ¾ cup of unsweetened coconut shreds.  Fold the three add-ins into the granola bar base and then press into the granola bar pan. Next, add ¼ cup chocolate chips and ¼ tsp coconut oil to a small saucepan.  Over low heat, begin to melt them in the saucepan using a small whisk and stirring constantly to ensure no burning. As soon as the chocolate is melted, remove the saucepan from the heat, and using a spoon, drizzle the chocolate over the granola bars (before putting them in the freezer).  Once the chocolate drizzle is done, put the granola bars in the freezer and let freeze.

2. TRAIL MIX BLEND

Trail Mix Blend might be my favorite variety!! (although after one bite of each granola bar I say “that” one is my favorite!).  There’s something about having a snack with pepitas, cranberries, almonds, and raisins that reminds me of going on a hike in the woods.  So many great flavors merge together for a great tasting snack!

Make the granola bar base and mix in ½ cup roughly chopped almonds, ½ cup dried cranberries, ½ cup pepitas (pumpkin seeds), and ½ cup raisins.  Press the mixture into the Granola Bar Pan then place it in the freezer. Let them set in the freezer then remove from the freezer and pop them from the pan.

3. CHOCOLATE CHIP

Chocolate Chip Granola Bars are the most loved of course.  The easiest of the granola bars to make! After making the granola bar base, add in 1 cup of dairy-free chocolate chips and fold into the mixture.  Press the mixture evenly into the granola bar pan. Place in the freezer and let freeze before popping the bars from the pan.

4. CRANBERRY CASHEW

Crunchy cashews meet sweet-tart cranberries for a great tasting granola bar.  Make the granola bar base, then add 1 cup roughly chopped raw cashews and 1 cup dried cranberries.  Fold into the mixture. Press the mixture evenly into the Granola Bar Pan. Place in the freezer and let fully freeze before popping the bars from the pan.

5. PEANUT BUTTER CARAMEL

I was surprised by how many of you asked for caramel in the granola bars!  But, you asked and I listened! Here are some amazing tasting Peanut Butter Caramel Granola Bars.  Make the granola bar base with YOUR CHOICE of creamy peanut butter OR crunchy peanut butter! Then make a batch of my Vegan Caramel Sauce and let cool in the refrigerator until thickened.  (Recipe below) Press the granola bar mixture into the Granola Bar Pan then spoon the chilled caramel sauce on top of each granola bar. Place in the freezer and let freeze before removing from the pan.  SIDE NOTE: This variety of granola bars will always be a little bit gooey. The caramel does set nicely once frozen, but while it warms up to room temperature, the caramel becomes more sticky. Just to let you know in case you’re packing them in your purse or backpack!!

6. CASHEW CARAMEL

Bringing that wonderful caramel flavor to another granola bar variety!  This one is going to make you all so happy! Each bite just makes us smile, it’s so darn good!

Make the granola bar base and add in 1 cup of roughly chopped raw cashews.  Make a batch of my Vegan Caramel Sauce and let it cool in the fridge until it’s thick.  Press the granola bar mixture into the Granola Bar Pan. Taking the thickened caramel sauce from the fridge, use a spoon and drizzle the caramel over each granola bar (still in the pan).  Place the pan in the freezer and fully freeze. Remove from the freezer and pop the granola bars from the Granola Bar Pan.

Ingredients
Granola Bar Base:
  • 1 cup creamy peanut butter
  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 2 cups gluten-free quick cook oats
  • 1 3/4 cup crispy rice cereal (check for gluten-free ingredients)
Chocolate Chip Granola Bars:
  • 1 cup dairy-free chocolate chips
Cranberry Cashew Granola Bars:
  • 1 cup roughly chopped raw cashews
  • 1 cup dried cranberries
Almond Joy Granola Bars:
  • 3/4 cup roughly chopped almonds
  • 3/4 cup dairy-free chocolate chips (divided)
  • 3/4 cup unsweetened coconut shreds
  • 1/4 tsp coconut oil
Trail Mix Blend Granola Bars:
  • 1/2 cup roughly chopped almonds
  • 1/2 cup dried cranberries
  • 1/2 cup pepitas (pumpkin seeds)
  • 1/2 cup raisins
Peanut Butter Carmel Granola Bars:
  • 1 batch Vegan Caramel Sauce (recipe above in post)
Cashew Caramel Granola Bars:
  • 1 cup roughly chopped raw cashews
  • 1 batch Vegan Caramel Sauce (recipe above in post)
Instructions
Granola Bar Base:
  1. In a large mixing bowl combine the peanut butter, honey, and melted coconut oil. Add the gluten-free quick cook oats and crispy rice cereal. Stir until well combined.

Chocolate Chip Granola Bars:
  1. Add 1 cup of dairy-free chocolate chips to the Granola Bar Base and stir together. Press the mixture evenly and very firmly into the granola bar pan. Place in the freezer and let freeze for about 30 minutes. Remove from freezer and carefully pop bars out of the granola bar pan .

Cranberry Cashew Granola Bars:
  1. Add 1 cup of roughly chopped cashews and 1 cup of dried cranberries to the Granola Bar Base. Stir together. Press the mixture evenly and very firmly into the granola bar pan. Place in the freezer and let freeze for about 30 minutes. Remove from the freezer and carefully pop bars out of the granola bar pan.

Almond Joy Granola Bars:
  1. Add 3/4 cup roughly chopped almonds, 1/2 cup dairy-free chocolate chips, and 3/4 cup unsweetened coconut shreds to the Granola Bar Base. Stir together. Press the mixture evenly and very firmly into the granola bar pan. In a small saucepan over low heat, add 1/4 cup dairy-free chocolate chips and 1/4 tsp coconut oil. Using a whisk, stir constantly until chocolate chips are melted. Remove from heat and using a spoon, drizzle the melted chocolate over the granola bars. Place the granola bars in the freezer and let freeze for about 30 minutes. Remove from the freezer and carefully pop bars out of the granola bar pan.

Trail Mix Blend Granola Bars:
  1. Add 1/2 cup roughly chopped almonds, 1/2 cup dried cranberries, 1/2 cup pepitas, and 1/2 cup raisins to the Granola Bar Base. Stir together. Press the mixture evenly and very firmly into the granola bar pan. Place in the freezer and let freeze for about 30 minutes. Remove from freezer and carefully pop out of the granola bar pan.

Peanut Butter Caramel Granola Bars:
  1. Make the Granola Bar Base with either creamy peanut butter OR crunchy peanut butter. Press mixture evenly and firmly into the granola bar pan. Make a batch of Vegan Caramel Sauce (recipe above in post) and let cool in the refrigerator until thickened. Once cool and thickened, use a spoon and spoon the caramel sauce on top of each granola bar. Smooth out across the entire top of each granola bar with the back of the spoon. Place in the freezer and let freeze for about 30 minutes. Remove from the freezer and carefully pop out of the granola bar pan. (see notes about this variety of granola bar in post above!)

Cashew Caramel Granola Bars:
  1. Add 1 cup roughly chopped raw cashews to the Granola Bar Base. Stir together. Press evenly and very firmly into the granola bar pan. Make a batch of my Vegan Caramel Sauce (recipe above in post) and let cool in the refrigerator until thickened. Once cool and thickened, use a spoon and drizzle the caramel on top of each granola bar. Place in the freezer and let freeze for about 30 minutes.
