Summer Peach Spinach Salad

We are ready for summer and all the summer flavors that come along with the new season. Fresh fruit is probably our absolute favorite summer flavors. Fresh peaches are among those favorites. We love to order a big crate of them a few times a summer and enjoy the juicy ripe peaches in as many ways as we can. One of my new favorite ways is in my Summer Peach Spinach Salad recipe.
The fresh peaches pair perfectly with the sweet dates and the tart tang from the balsamic vinegar. Dates always offer a great sweetness to any dish. They’re easy to chop up and add to almost any salad or dish. And the balsamic vinegar is simply perfect with the fresh peaches and spinach. It brings in such a tart tang that mixes well with the raw onion and spinach and is tamed down with the sweetness of the date chunks.
Summer salads are the best, right? They’re easy to mix together and always a great option for a light lunch or a nice side with dinner. Or if you’re like me, then they make a great breakfast too. I love looking at each meal as simply meal #1, meal #2, and meal #3. Instead of putting the name “breakfast”, “lunch”, and “dinner” on them that leads to a thinking breakfast needs to be sweeter. As long as each meal has a balanced plate of protein, carbohydrates, and healthy fat you’re good to go with any food. Even Summer Peach Spinach Salad for breakfast!
Ready to make and serve this salad? It won’t take long my friends! In a big serving bowl add the fresh spinach, chopped dates, sliced onion, diced avocado, and sliced peaches. Drizzle with the dressing, and gently toss together. It’s ready to serve that quickly, or put it in a covered container in the fridge and let it get nice and chilled before serving. - 2 heaping handfuls fresh spinach
- 2 cloves garlic, minced
- 1 medium avocado, diced
- 1 medium peach, sliced
- 4-5 dates chopped
- 1/2 medium purple onion, thinly sliced
- 2 Tbsp Balsamic vinegar

In a large mixing bowl, add the spinach, minced garlic cloves, onion slices, diced avocado, dates, and sliced peaches. Drizzle with balsamic vinegar. Gently toss together. Transfer to a serving bowl. Serve immediately or chill in the fridge for 1-2 hours.
Store leftovers in a covered container in the fridge for up to 5 days.
