Slow Cooker Pork Carnitas Tacos are just waiting to be your new best friend. Meals made in the slow cooker are pretty much the best thing you can make. I love being able to load up the slow cooker right away in the morning and know that dinner will be ready right on time that day. Right after I’ve served breakfast and the dishes have been cleared, I take out the slow cooker and add the pork loin roast with all the seasonings on top to it and start it cooking on low. It’s nice knowing dinner has already been started and there won’t be a rush once 4 o’clock comes.
Veggies in my tacos please
Let’s talk about those extra veggies in the taco meat. Sometimes it’s hard to get enough servings of veggies to all the kids each day. So anytime I can, I hide vegetables into meals. The kids don’t see (or at least don’t put up a fuss about it!) the veggies, there’s added nutrients to the meal, and I feel like a good mom for serving more veggies. Sending a few raw carrots through the food processor only takes a few minutes and it’s worth it!
Hot sauce and limes please
Look at these amazing Slow Cooker Pork Carnitas Tacos! They are just amazing to eat, so much flavor and texture. The southwest flavors from the seasoned pork, the hint of lime from the freshly squeezed lime wedge, and of course the added heat from extra hot sauce. Once the taco is in the shell and ready add a pinch of pink sea salt, it really brings out the flavors of the meat and the hint of lime. And of course whichever toppings you choose. If you’re like me those toppings would be a little coconut cream (yes, I’m completely obsessed), avocado chunks and hot sauce.
Here’s how you do it
It’s really quite easy to make Slow Cooker Pork Carnitas Tacos, first you’ll add the pork loin roast to the slow cooker with all the seasonings. Let that cook on low for 6 hours until the meat is juicy and tender and easily shreds with a fork. Once the pork is ready, you can get all of the extras ready! We like to use corn shells for dinners or if it’s a light lunch I’ll add the pork carnitas to a big bowl of spinach and top it with avocado, coconut cream, lime juice, sea salt and a little splash of hot sauce.
- 2 lbs pork loin roast
- 3 Tbsp chili powder
- 1 Tbsp onion powder
- 2 tsp garlic powder
- 2 tsp sea salt
- 1 tsp cumin
- 1 tsp ground black pepper
- corn shells
- spinach
- cilantro
- avocado
- lime wedges
- hot sauce of choice
- pink sea salt

In a slow cooker place the pork loin roast and sprinkle all seasonings on top. Cover with the lid and cook on low for 6 hours or high for 4 hours.

Shred fully cooked pork with a fork. Let sit in juices in the slow cooker until ready to serve.

Using either corn shells (non-Whole30) or a bowl of spinach (Whole30 version), add a portion of shredded pork carnitas and top with chopped cilantro, avocado chunks, a squeeze of fresh lime, a pinch of pink sea salt, and a hot sauce to taste.
