We’ve been able to find fresh greens year-round and this side dish is one that always goes over well when friends and family gather together. HOW TO MAKE IT:
To make Sautéed Fresh Green Beans with Lemon, begin with heating the avocado oil in a large skillet over medium heat. Add the freshly washed and dried green beans. Toss the green beans in the avocado oil or stir with tongs to evenly coat the green beans. Add the sprinkle of sea salt and freshly squeezed lemon. Cook the green beans for 8-10 minutes. Tossing or stirring with the tongs every 1-2 minutes so an not to burn them. Once the green beans have turned bright green and are just beginning to soften, remove from the skillet and serve.
TRIM THE TIPS:
Most of the fresh green beans I buy already have the tips trimmed off (thank you Green Giant!). If you’re sourcing your green beans from a Farmer’s Market or your own garden, be sure to pinch the ends of the green beans off before cooking them.
DIFFERENT OILS TO USE:

- 1 10 oz bag fresh green beans
- 1 Tbsp avocado oil
- 1 lemon, half for fresh lemon juice & half for serving
- sea salt & pepper to taste

In a skillet over medium heat, heat the avocado oil. Add the fresh green beans. Toss to evenly coat the green beans in oil. (Or use tongs to stir)

Squeeze half the lemon over the green beans and add salt and pepper to taste. Toss again.

Cook for 8-10 minutes or until green beans are bright green and beginning to soften.

Remove from heat and place on a serving platter with the other half of the lemon cut into slices.
Place leftovers in the fridge in a covered container for up to 4 days.
