Greet the morning with Morning Glory Granola.
A fresh batch of granola is our all time favorite for breakfast. It’s still a little warm from the oven, crunchy and chewy, and can keep you full all morning. Of course that means waking earlier and making a batch before the kids wake up…which lets be honest, doesn’t happen too often. Most of the time I’ll make a batch in the evening and have it ready for the morning.
Lover of granola but not loving all the sugar in each serving? Same here. I would find myself standing in the aisle at a grocery store turning each package of granola over scanning the sugar per serving. So many of them have too much sugar and they’re making it into my shopping cart. There certainly are some GREAT granolas out there to buy, but when it comes to a good ingredient list and low sugar, they come with a higher price tag. I turn to making a big batch of homemade granola…I know exactly what is in it and it’s very cost effective. Win win!!
Morning Glory Granola has it all, golden raisins, grated carrots, puffed quinoa, sunflower seeds…makes for a very tasty batch of granola. As for spices, I kept it very simple. The add-ins add flavor and sweetness so I felt that a little cinnamon and a drop each of Nutmeg and Clove was plenty! For your batch of granola, feel free to substitute the Nutmeg and Clove Vitality essential oil out for ground Nutmeg and ground Clove, about 1/4 – 1/2 tsp of each (depending on how bold you would like your flavors!).
Grated carrots in granola you might ask? Heavens yes!! They add just a little hint of sweetness and a little bit of chewy. Believe me when I say grated carrots in granola is a fantastic idea! Plus, you’ll get a little more veggies in for the day. Sure, it’s not enough to skimp on them for lunch and dinner, but I like to think added veggies (no matter how small) are beneficial! Plus, hiding vegetables in food is my specialty. With little ones in the house that can be picky eaters (and veggie haters at time!) hiding them is my mom-job!
- 2/3 cup honey
- 2 Tbsp coconut oil
- 1/2 cup grated carrots
- 1/3 cup puffed quinoa
- 1/2 cup golden raisins
- 1/4 cup raw sunflower seeds
- 4 cups rolled oats
- 1 tsp ground cinnamon
- 1 drop Nutmeg Vitality essential oil
- 1 drop Clove Vitality essential oil

Preheat oven to 375 degrees. Line a baking sheet with parchment paper.

In a small saucepan heat the honey and coconut oil over medium heat. Stirring until a low boil. Continue a soft boil for 2 minutes. Remove from heat.

In a large mixing bowl combine the remaining ingredients. Add the honey/coconut oil and fold in using a spatula.

Spread evenly onto the prepared baking sheet. Bake for 20 minutes. Stirring after 10 minutes.

Store in an airtight glass container for 10-12 days.
