Healthy Chicken and Kale Grain Bowl

It’s a light and refreshing grain bowl recipe that will keep you full, save on the budget, and is easy to prep all while giving you maximum nutrition!
This grain bowl recipe was inspired by a Crisp & Green salad I had while in Minneapolis with my sister, Laura. Laura and I met up for a weekend to have a much needed break from the kids 😉 and to run a 5k together. It was my first 5k and one of my goals to accomplish! We ran it in the rain and cold temps, but we did it and had fun together! After the race we refueled with a big grain bowl from one of my absolute favorite restaurants, Crisp & Green. Creating this salad is very simple. Make a batch of quinoa and brown rice while baking some chicken thighs or chicken breasts (your choice) and a batch of Healthy Roasted Chickpeas. While those three ingredients are cooking, cut up the grapes, mushrooms, and beets. Massage the kale for a few moments until it turns bright green. Once everything is done cooking and everything is cut up, mix it all together in a large serving bowl. Toss it together and add the homemade dressing. Voila! Your perfect summertime salad recipe is ready to serve!
When I make this recipe, it will be a couple of meals for Brandon and myself. I’ll make it in the late morning and serve it for our lunch. And then divide it out into containers for two more days worth of lunches or light dinners. I love having meals prepped and ready in the fridge for those quick grab-n-go meals. This Healthy Chicken and Grain Bowl is absolutely perfect for a make ahead meal prep session.
- 1 cup chicken thigh or breast cooked and cut to 1" cubes
- 1 cup cooked brown rice
- 1 cup cooked quinoa
- 1 cup sliced mushrooms
- 3 cups kale
- 3/4 cup Healthy Roasted Chickpeas
- 1 cup sliced red grapes
- 1/2 cup sliced beets
- 1 lemon, squeezed
- 1/4 cup avocado oil
- 1-2 Tbsp honey
- 1/2 tsp coarse ground pepper

Prepare brown rice and quinoa according to package. Bake chicken thighs or breast in the oven until cooked through, remove from oven and cut to 1” cubes. Bake one batch of Healthy Roasted Chickpeas.

Cut mushrooms, red grapes and beets.

In a large serving bowl add the kale and massage with hands until soft and bright green.

Add the brown rice, quinoa, cubed chicken, grapes, mushrooms, beets, and chickpeas. Toss together. Drizzle with the dressing. Gently toss together. Serve.
Store in a covered glass container in the fridge for up to one week.
