Dairy-free Cornbread
Our cornbread is dairy-free, egg-free, and gluten free & perfectly golden, light and fluffy.
Cornbread is an all time classic. I remember my mom reading aloud to us during our homeschool days. So many wonderful books, especially Little House on the Prairie. In the book they talked about making cornbread or Johnny Cake, as it was frequently called. Since it was read about in a book, it meant it was delicious for us to eat too, right?
Just recently we went on a camping trip with a couple of my sisters and their families. The county campground was down Johnny Cake Ridge Road. How cute is that?? We instantly thought about cornbread and back to the days it was so fondly called Johnny Cake. Perhaps it is still called so, but in our house we simply say Cornbread.
Golden, light and fluffy. All three make up some pretty good cornbread. Even though they’re dairy-free, egg-free and gluten-free they’re still great tasting, they hold together unlike some egg-free recipes that crumble when you hold it. Even my husband that can detect gluten-free flour in the first bite (sorry he’s not a fan) declared them to be “very delicious”!
How are a few ways to eat them to ask? Honey drizzled on top is always so yummy…adding a bit of sweet to the bread. They also pair nicely with my Paleo Sloppy Joes! Of course adding them to the Paleo Sloppy Joe’s makes them no longer Paleo because of the corn, but hey that’s where Food Freedom comes in, right? We eat some corn here and there and we’re okay with it.
- 1 cup cornmeal
- 1/2 cup Cassava flour or gluten-free flour blend
- 1 tsp sea salt
- 1 Tbsp baking powder
- 1/2 cup coconut cream
- 1/2 cup water
- 1/2 tsp baking soda
- 1 Tbsp white vinegar
- 1/2 cup avocado oil

Preheat oven to 350 degrees. Grease 9x9 baking dish, set aside.

In a medium mixing bowl combine all wet ingredients. Add dry ingredients and stir well.

Pour batter into the prepared baking dish. Bake for 20-25 minutes or until golden brown and a few cracks appear on the top of the cornbread.

Cool slightly before cutting into 9 equal pieces.
