Cranberry-Apple Pork Chops

Everyone gathered around the table will be enjoying Cranberry-Apple Pork Chops and having the best conversations amongst friends. That’s what the holidays are all about, right? Gathering with friends and family and catching up! A good home cooked meal always adds to the cozy feels of having friends over. This holiday season we’re spending time with a ton of our family. For Thanksgiving we’re making the drive to visit my side of the family. I have a big family…I’m third of nine children! With almost all of my sisters married and starting their own families, our “little” get togethers always host at least 30 people! Always a great time with so much laughter.
Have you tried coriander with pork chops before? It adds so much flavor to the chops and when added WITH cinnamon…the spice of the cinnamon combines with the sweet of the coriander making one kick a** meal you’ll be asking for again and again! I also like added a little pink Himalayan sea salt and coarse ground pepper to bring out the sweet flavors and add a little zip.
Any meal with added cranberries reminds me of Christmas! We used to string cranberries and popcorn to decorate the house or put on our second Christmas tree. Cranberries just smell of Christmas! So adding fresh cranberries to this recipe, especially with the added spices of cinnamon and coriander, it’s a holiday meal for me. A meal to be shared with my little family or when we have friends over for a visit.
Cranberry-Apple Pork Chops is the meal of choice around here, the kids love the little hint of sweetness from the apples and I love that it only takes 30 minutes to make! Start to finish this meal is only 30 minutes. I start with browning the pork chops in a little coconut oil or avocado oil and while they’re cooking I slice the apple and mushrooms and rinse the cranberries. Let the pork chops cook on each side for 8-10 minutes. Then add the mushrooms, apple slices and cranberries and cook covered for 8-10 minutes or until the cranberries have started to burst open. And that’s all…dinner is ready in 30 minutes!
- 6 thick-cut pork chops
- 1 apple, peeled & sliced
- 1 cup mushrooms, sliced
- 2 cups fresh cranberries, rinsed
- 1 tsp Himalayan sea salt
- 2 tsp ground cinnamon
- 1 tsp coriander
- 1/2 tsp coarse ground pepper
- 2 Tbsp coconut oil

Melt the coconut oil in a cast iron pan over medium-high heat. Once melted and pan is hot, add pork chops.

Season pork chops with ½ tsp sea salt, 1 teaspoon cinnamon, ½ teaspoon coriander and ¼ teaspoon pepper. Cook for 8-10 minutes.

Turn pork chops over, continue to cook for 8-10 minutes.

Add the sliced apple, sliced mushrooms, and fresh cranberries. Season with the rest of the spices.

Cover and cook for 8-10 minutes or until the cranberries have started to crack and the pork chops are cooked through.

Remove from heat and serve.
Store leftovers in an airtight container in the fridge for up to 5 days.
