Chipotle Salmon with Mango Salsa
Chipotle Salmon with Mango Salsa is an easy and healthy dinner. Rich in Omega-3 and high in protein, salmon is a great dinner for the family. A spicy chipotle flavor and a sweet mango salsa make for a delicious dinner!
Chipotle Salmon with Mango Salsa is another quick and easy dinner recipe. I love sharing 30-minute meals because I understand the need for quick and easy dinners that are still healthy! With the smokey flavors of the salmon and the spicy chipotle seasonings mixing with the sweet and spicy mango salsa, this salmon bake is amazing.
Step 1:
Make the Easy Mango Salsa with Lime then place it in the fridge to chill.
Step 2:
Preheat the oven to 325 degrees. Line a baking sheet with parchment paper. Place the salmon, skin side down, on the baking sheet. Rub the avocado oil onto the salmon, then sprinkle the chipotle seasoning evenly over the salmon.
Step 3:
Bake the salmon for 25 minutes. Then remove it from the oven.
Step 4:
Using the Mango Salsa from Step 1, spoon it over the top of the baked salmon (see photos below). Serve.
MEAL PREP TIPS:
Making this chipotle salmon for your meal prep? A couple of tips I have for you:
(1) Bake the salmon as the directions say. Divide the baked salmon up evenly into containers. Add the mango salsa to a separate divider in the container. Adding the salsa on top of the salmon will result in “soggy” salmon after 3 days.
(2) To prep this meal to bake later in the week, keep the salmon in the package as when you bought it. But prep the Mango Salsa. Put it in an airtight container in the fridge so it’s ready for the night you make this dinner. The salsa will last for up to 6 days in the fridge, so plan accordingly.
FREEZER-FRIENDLY?
This dinner is not freezer friendly. Salmon just doesn’t freeze well after it’s been baked.
- 1 4-6 oz salmon fillet (skin on)
- 2 Tbsp avocado oil
- 2 Tbsp Chili Lime Seasoning Blend (Trader Joe's)
- 1 lime
- 1 batch Easy Mango Salsa with Lime (link in post)

Preheat the oven to 325 degrees. Line a baking sheet with parchment paper.

Place the salmon fillet, skin side down, on the baking sheet.

Rub the avocado oil onto the salmon. Sprinkle the chili lime seasoning blend evenly on the salmon fillet.

Cut the lime in half and squeeze fresh lime juice onto the salmon from one half of the lime. Cut the other half of the lime into thin rounds and place on top of the salmon fillet.

Bake the salmon for 25 minutes, or until just cooked through. (see notes below)
Remove from the oven and spoon the mango salsa on top of the salmon. Serve.
To test if the salmon is done, poke a fork into the salmon and twist, if the fish flakes (see photo in post) the salmon is cooked through. If the salmon appears too juicy, bake for another 5-8 minutes and test again.
Store leftovers in the fridge in an airtight container for up to 5 days.
