Are you ready for one of the quickest lunches ever? Avocado Tuna Salad with Spaghetti Squash was tossed together one afternoon within ten minutes and after just one bite, I knew I had to share this one on the blog. The creaminess from the avocado, the protein packed tuna, the noodle-like texture of the spaghetti squash, and the fresh lemon and sea salt really came together for an epic lunch. I enjoyed a big bowl of it for lunch and there was enough leftover for two more lunches! I love when I can make enjoy one meal for several days. Who wouldn’t?
So if you’ve been following along on Instagram stories, you will have noticed I have been having a few health issues. Nothing life threatening thankfully, but enough to throw me into a bit of a downhill spiral. Along with having daily symptoms, I’ve been having doctor appointments and tests every other week. Which means a lot of being gone from the house, having our routine messed up, and WAITING. I have a tough time waiting for test results. One diagnosis I have received already is that I have a confirmed autoimmune disease of psoriasis, psoriatic arthritis and raynaud’s disease. So I’ve delved into the world of autoimmune diseases and am trying to learn everything I can about it and how to incorporate food into the healing process.
Lately, I’ve been listening to several podcasts about autoimmune disease and healthy eating (I’ll share them at the end of this blog post). I listen while folding laundry, working out at the gym, making dinner, on long car rides…just about whenever I can sneak in a little time. Over and over again I hear of stories and new research showing that eating whole foods really do have a big impact on our health. So if something as simple as making our own meals with foods that come from the ground and are raised on farms or freshly caught can help eliminate our symptoms and possibly reverse our autoimmune disease, why not do it? It doesn’t have to be incredibly hard, it can actually be the opposite! Let’s make some really easy meals together that are very flavorful and have you wanting more. - 2 cans wild-caught skipjack tuna
- 1 medium spaghetti squash cooked, cooled and shredded
- 2 avocados
- 1/2 tsp pink sea salt
- 1/2 cup kalamata olives sliced
- 1/2 cup mushrooms washed and sliced
- 1 lemon freshly squeezed

In a large mixing bowl combine the avocados, sea salt, and lemon juice. Add the spaghetti squash shreds, tuna, mushrooms and kalamata olives. Using a large spoon, gently stir together until evenly coated with avocado ‘dressing’.

Serve with a slice of fresh lemon.
Store leftovers in a glass container in the fridge for up to 5 days.
